1 cup uncooked short grain brown rice
2 cups water
1TBS rice wine vinegar
1 TBS honey
1 avocado
1 cucumber
1 tsp wasabi powder
3 sheets nori- aka sushi wrappers (not the kind with tamari or anything else added)
sesame seeds
coconut aminos
soak the rice in the water vinegar and honey for 30 minutes, bring to boil, then simmer for 30 minutes on low, let rest an additional 30 minutes
while the rice is cooking slice up the avocado and cucumber into strips,
mix the wasabi powder with water
once the rice is done, spread it on one half of the nori wrapper about 1/4 inch thick spread the wasabi along the edge arrange the cucumber and avocado in a thin line along the edge then roll it up so the avocado and cucumber is in the middle, you’ll have one big long sea-weed burrito, slice it into bite sized pieces, sprinkle them with sesame seeds and chill
serve with small dish of coconut aminos for dipping.
