Just wanted to give you an encouraging update on our family’s health. T. and I have just completed our first week of the elimination diet and are feeling great. We delayed starting a week because T. really wanted to participate and that start date worked better. I didn’t even have to ask him – when I told him I was starting, he volunteered. He’s definitely had his share of grumbling along the way, but he’s done an excellent job. I think between the two of us we have lost 14 pounds already! This process has definitely stretched my cooking repertoire; but we are really enjoying the range of delicious, flavorful, whole foods. The only thing I really miss is caffeine!
